Since embarking seventeen years ago on a life-long commitment to culinary achievement, Chef Vallery, has steadfastly tuned his talent and award-winning creativity to provide some of the finest examples of Regional Cuisine for both Sonoma and Northern California.

A native of California, Chef Vallery found perspective by electing to receive his formal training at the prestigious Culinary Institute of America, in Hyde Park, New York. While working toward a Culinary Arts degree (1998), Chef Vallery apprenticed at the Equinox Hotel in Manchester, Vermont, and the Quail Country Inn of Poughkeepsie, New York.

After returning to the San Francisco Bay Area, Chef Vallery, enjoyed immediate success and progressive stays as Chef for the Marriott Hotel of Santa Clara and the Hilton Hotel, of Santa Rosa, before exploring further knowledge as Sous Chef for the award-winning Seafood Brasserie, which was to open at the Vinyard Creek Hotel in Santa Rosa. During his stay with the Brasserie (May, 02 - Nov., 03), Chef Vallery worked closely under renowned Chef, Liz Ozanich and was instrumental in assisting Chef Ozanich with final kitchen design and other facility elements. Chef Vallery also represented the Brasserie at the Sonoma County Harvest Fair where he walked off with several awards.

In 2003 Chef Vallery took over the culinary operations as Executive Chef of the Santa Rosa Golf & Country Club. During his tenure at the club he was able to build a capable, as well as a fiscally responsible and efficient culinary team. Chef Vallery won the Harvest Fair Sweepstakes award 3 consecutive years while at the Country Club.

Chef Vallery has only intensified his never-quenched thirst for fresh culinary offerings and thoughtful food concepts. In Early 2008 Peloton Catering was founded. Peloton caterers to many wine country notables, using the local farmers markets as inspiration. Chef Vallery’s goal is to eventually open a restaurant and works towards this goal daily.
